Thanks for asking. I hope you and your near and dear ones are doing well during these difficult times.
I must say notes are very important not just for MBBS, for any study, assignment, presentation or exam. Since syllabus of MBBS is so vast, the importance of notes can’t be ignored. It is cumbersome task sometimes, I agree. But you can’t replace it with something. But you have some supplementary but equally essential tools along with these notes which make it easier.
First is visualisation of each concept, for wich you need diagrams and flowcharts. I pasted link of one of my answers, here below. Do give it a read. It will help you. It is not just for anatomy, it is for every subject.
Second, you must have study partners atleast one. If there is group of sincere hardworking people who believe in healthy and productive competition ( fairly away from zelousy, hiding important information from group etc) and with fair amount of trust among themselves.
I have experienced this, when you listen and virw something you remember it more than just merely writing it down.

In the end you must not down the most important points and those points that you can’t visulaise in the picture in just key words, not the whole story things. You will get very clean, crispy and concise notes which will be be a huge help in final exams when you have to revise the whole syllabus in just one half day. I guess this would help you.
All the best
